2 tablespoons salad oil
4 lamb neck slices curry powder to taste
1/2 teaspoon chili powder
1 can (10Y2 ounces) condensed cream of chicken soup
1 cup water cooked rice
Heat oil. Add lamb neck slices; brown on both sides. Pour off drippings. Combine curry and chili powders and slowly stir in soup and water. Add sauce to lamb; cover and cook over low heat 30 minutes or until lamb is tender. Turn lamb occasionally as it cooks. Serve lamb over rice. Makes 4 servings. Lamb Neck Stew
2 tablespoons salad oil
3 pounds lamb neck for stew
1 cup chicken bouillon
11/4 teaspoons salt
1/8 teaspoon pepper
1 teaspoon oregano
1 teaspoon thyme
1 clove garlic, chopped
1 cup diced white turnip
8 large carrots, quartered 8 small white onions
2 tablespoons flour
2 tablespoons water

Heat oil in 4-quart pressure cooker. Brown lamb in oil; remove and drain off fat. Return meat to cooker; add bouillon and seasonings. Close cover securely. Place pressure regulator on vent pipe following manufacturer’s directions and cook 12 minutes with pressure regulator rocking slowly. Cool cooker at once under cold running water. Add vegetables; mix. Cover and cook 5 minutes with regulator rocking slowly. Cool cooker at once under cold running water. Using slotted spoon, remove lamb and vegetables to serving dish; keep warm. Blend flour and water; stir into stew liquid. Cook, stirring constantly, until gravy boils 2 minutes. Pour over lamb and vegetables. Makes 4 servings.
